Cacao beans from the Bejofo Estate on Madagascar, which is a massive estate that grows some world famous cacao. The reason why Friis-Holm calls this 'Fast Dried' is because after the fermentation, they dry the beans in the sun for 8 hours per day in the beginning. This is opposed to Friis-Holm's Madagascar 64% Slow Dried where the bean drying process is much slower. This gives a very different flavor profile. Madagascar 64% Fast Dried is an acidic more spontaneous taste. A very clean chocolate.
