HOW COGNAC IS MADE

A little about cognac

The quality of the cognac is measured by how long it has rested (Mariage) in oak casks from Limousin or Troncais.

  • VS (Very Special) or three stars, is the youngest branded cognac with an age of at least 2 years.

  • VSOP (Very Superior Old Pale), VO (Very Old) or Réserve, requires an age of at least 4 years.

  • XO (Extra Old), Extra or Hors d'Age, requires an age of at least 6 years.

Cognac is a very special spirit that is loved worldwide for its unique taste. Cognac can be enjoyed in many different contexts, but it especially comes into its own after a tasty meal, where it must be at normal room temperature during consumption. But the cognac is also much more than that.

Cognac is a form of brandy, and it is also called French grape brandy, but the spirit must, among other things, is only called cognac if the grapes are grown within a defined geographical area near the French town of the same name. Because cognac is precisely named after the town of Cognac, which is located in southwestern France in the Charente district. The area and the town are today loved and world famous for its production of cognac, which is why it is also a favorite tourist destination among cognac enthusiasts.

HOW COGNAC IS MADE

For the production of cognac, white wine grapes are used, which are harvested relatively early, so that all the acidity is preserved. When the grapes are harvested, they are distilled and stored in oak barrels, where they are continuously checked. When the liquid has reached an alcohol percentage of approx. 40%, the cognac as such is finished. However, it may can be mixed with other distillates if a more complex taste is desired. Depending on the type of cognac, the liquid must be stored for several years before it is bottled.

THE STORY BEHIND COGNAC

Like much else liquor then the cognac is also rich in history. Cognac's origins can then also be dated back to the 16th and 17th centuries, when Dutch traders settled in south-west France – originally with the intention of buying raw materials such as salt, wood and wines. But on the sailing trip home to Holland, they often had problems preserving the wine properly. Nevertheless, they found that they could distill the wine twice, and suddenly the spirit could keep. And in this way the first brandy, and thus in principle also the first cognac, was created.
