Madagascar is a large plantation that grows world famous cocoa. This variety is called 'Fast Dried' because after fermentation they dry the beans in the sun for 8 hours a day at first. This is in contrast to Madagascar 64% Slow Dried, where the drying process is much slower. This gives a completely different flavor profile.
Madagascar 64% Fast Dried has a more acidic and spontaneous taste. A very pure chocolate.
