Description:
We call our La Dalia chocolates 'The Lazy Cocoa Growers Blend', because it is a mix of different kinds of cacao beans. When we asked the farmers to sort the beans into the different sorts, they said no! So as a friendly banter, we thought that was a bit lazy! But luckily enough, we now get to enjoy this fantastic chocolate with a mix of many different kinds.
Our La Dalia 85% is in the same series as La Dalia 60%, La Dalia 70% and La Dalia 100%. The La Dalia 85% is a very acidic chocolate, with a mineral character. The berry notes we taste in the 60% and 70% La Dalia, disappear but in comes a different type of intense acidity that breaks the intensity of the cacao. And this is exactly what you would want in a high chocolate percentage, because if you don't have that, it can be very intense. The acidity will somehow lift and lighten the chocolate.
