The Macallan 30-year Double Cask 2021 Highland Single Malt Scotch Whiskey is the latest of The Macallan's exclusive, annual 30-year releases.
The Macallan 30-year Double Cask 2021 release whiskey is stored at European and American oak handpicked by The Macallan's Master of Wood from forests in Spain as well as Ohio, Missouri and Kentucky. After felling, both the American and European trees have been transported to southern Spain, where they have been allowed to dry naturally before being made into barrels and roasted over an open fire in Jerez. Here, the barrels have been filled with the finest sherry, which has flavored the barrels for 2 years, after which they have been emptied and shipped to The Macallan's Distillery in Speyside in Scotland. Here they have been filled with freshly distilled whisky, and have since lain untouched for 30 years until bottling in 2021.
Taste and smell
The long aging in two types of oak casks has given The Macallan 30-year Double Cask 2021 release whiskey its natural, golden color and distinct aromas of honey, sweet caramel, red apples, figs and vanilla pods. The whiskey has flavor notes of dried fruit, cinnamon, ginger and vanilla, leading to a sweet finish of oak, gentle spices and caramel.
The distillery
An obsession with quality has characterized The Macallan since its founding by Alexander Reid on a plateau above the River Spey in north-east Scotland. The distillery is surrounded by a 485 hectare estate with Easter Elchies House at its heart.
