Among Louis Roederer's Champagnes, Carte Blanche is the Champagne that has received the largest dosage and is thus the sweetest. It is made from 60% Pinot Noir, 6% Pinot Meunier and 34% Chardonnay, and as Brut Premier it is made from a minimum of four different vintages, of which 3 come from the "Réserve" and are selected from among the oldest vintages.

The wine is fermented in the bottle for 3 years, and the "dosage", i.e. the sugar liqueur that is added when the fermentation in the bottle is finished, is approx. 45 g per liter against 11-12 g. in Brut Premier and 32 g. for Grand Vin Sec.

Carte Blanche is clearly more marked by the older reserve wines than a Brut Champagne is, but the wine also has Roederer's complexity and structure. It is best suited for sweet desserts, e.g. desserts made with honey or marzipan.

Louis Roederer was founded in 1776 and their fields are located in the 3 best regions of Champagne: Montagne de Reims, Vallée de la Marne and Côte des Blancs and they cover 80-85% of Louis Roederer's total needs for grapes. 97% of the vineyards are classified as Grand Cru or Premier Cru.
