Course of action:
Warm the milk a little and stir the yeast into the warm milk. Whisk buckwheat flour, wheat flour, salt and egg yolk into the dough. Let the dough rise with a clean tea towel for approx. 30 minutes Beat the egg white stiff and carefully fold it into the batter. Melt butter in a pan and add small blobs of dough with a tablespoon. Fry the blinis until golden on both sides. The finished blinis are served with caviar and optional accessories such as a little chopped red onion, a dollop of creme fraiche and a small sprig of dill.
